3 ingredients and only 3 steps to make these bad boys
1 small sweet potato
1 egg (2 eggs if using a large sweet potato)
2 teaspoons of coconut flour – to make them extra fluffy
- Grate the sweet potato – we decided to keep the skin on
- Mix in the egg and coconut flour to form a batter
- Fry in coconut oil, ghee or butter
Great with burgers, as a side dish or on their own.
Variety – add some cinnamon for a slightly sweeter treat or perhaps shred some onion, coriander and cumin to make a paleo onion bhaji 🙂
